Mortal Kombat 9- How do you gain the mastery of all characters?

I recently purchased Mortal Kombat 9, and am working on obtaining all possible achievments, but the one I struggle most with, are the ones where you must gain the mastery of all possible characters (My Kung Fu Is Stronger-60G). How do you gain mastery??
